How to Fry Dumplings

Despite being Chinese, despite having my mom describe how to do it, and despite having the Lees show me how they fried dumplings, I had no idea how to fry dumplings until a few days ago. That was when I happened to open a package of dumplings that had instructions for frying IN ENGLISH. So, for the rest of you clueless dumpling lovers out there, this is how to fry dumplings: 1) Preheat the pan on low heat as you prepare to get the dumplings and oil. Pour in just enough oil to have it a millimeter deep in the pan. The exact volume of this oil will vary with pan size. Place dumplings in the pan. Turn heat to medium. Cook until bottom of the dumplings are slightly brown (~2-4 mins) 2) Add enough cold water to have the water reach half the dumplings' height. Cover. Turn heat to high. 3) Cook on high until most of the water is evaporated. Turn heat to low as last water boils away. 4) Add vinegar, soy sauce, hot sauce, or whatever desired. DEVOUR!
