mochi attack!

Tonight I made some delicious mochi ice cream! To make the mochi I used a the recipe from Sweet and Savory and simply replaced the bean paste filling with ice cream. Folding dough around the ice cream was quite messy though. The ice cream was slippery and did not want to change shape. Later on, it got liquidy. Next time I will have an assembly line by making all the mochi pancakes first, then spooning out small, rounded scoops of ice cream to each mochi and wrapping them neatly. And they will be delicious. As a side, mochi by itself (just the dough) is pretty delicious. I got the first attempted mochi pancake stuck on my hands because I didn't dust my hands with flour first. So I ate it off. Oh man, it was sticky heaven. Maybe I'll just make mochi rolls next time.
